Gradually add 1 C HOT water in slow, steady stream
Beat at low speed just until blended
Stir in vanilla
Spoon into greased and floured 9" pans (3)
Bake at 350 for 25-30 min

I ran out of time to make this, I ended up looking at the southern living.com and found red velvet cupcakes with peppermint frosting, they turned out really good. I still want to make this cake though! Thanks for posting it.

Sorry this took me so long - with the holiday's things were busy. For the cupcakes I only used one bottle of food coloring and it was just fine. I hope you enjoy. I also crushed candycanes to sprinkle on top right before I served. If it is done too soon the sugar melts and runs.
