Buttermilk Oatmeal Pancakes

night before (at least 8 hours) 2 C oats 2 C buttermilk 2 eggs
combine and refrigerate overnight 1/2 stick butter (room temp.) 1/2 C flour 1 Tbs brown sugar 1 tsp baking powder 1 tsp baking soda 1/2 tsp cinnamon 1/2 tsp salt mix ingredients into oats/buttermilk pour onto griddle makes approx. 12 pancakes (thank you Teresa for passing this on to me!)

sooo good! I made these this morning for my boyfriend and I. He gobbled them up! The oats and buttermilk were REALLY chunky/goopy this morning so I ended up adding more buttermilk. I only had the quick oats, does it make a difference to use regular oats? or is it not supposed to "pour"?

Lindsy - I use regular oats, I don't know if that makes a difference or not. Haven't tried it with the quick oats. No, it's not supposed to pour like plain pancakes - they're supposed to be really thick. I usually use a 1/4 C measuring cup to dip the batter onto the griddle then spread it out however much I feel like. Glad you like them...they're the only kind I make now!

these have fast become the favorite... my boyfriend loves them, company loves them, i went to my parents and made them - they loved them! thanks for sharing... we are going to try mashed bananas in them to see how that tastes and works, right now i have just been putting fresh fruit on top.

Let me know how the bananas turn out...sounds really good to me! I don't even bother making any other kind of pancake now except these. Once your standards get raised it's hard to come back down! ;)
